Step by Step method

  • Peel and clean the pumpkin. Cut it in cubes. Coonit in a pan with some extra virgin olive oil.

  • Once cooked squash it with a fork. Add the grated nut meg, the parmesan, some olive oil the flour, salt and pepper. Last but not least the egg. Make a kind of dough.

  • Leave the mix to rest for about an hour.

  • With the help of some flour if the mix is too sticky, make small balls.

  • Cook the balls in boiling salted water. They are cooked as a soon as they come up.

  • In a separate pan cut some onion and carrot with olive oil. Brown them, then add some water to let it cook. Blend the mix, to form a broth.

Tips & variations

  • Serve the dumplings with the veg broth. Add some pepper and chives on the top.
