Pumpkins recipe idea. Vegetarian dumplings for a winter hot dinner.
Peel and clean the pumpkin. Cut it in cubes. Coonit in a pan with some extra virgin olive oil.
Once cooked squash it with a fork. Add the grated nut meg, the parmesan, some olive oil the flour, salt and pepper. Last but not least the egg. Make a kind of dough.
Leave the mix to rest for about an hour.
With the help of some flour if the mix is too sticky, make small balls.
Cook the balls in boiling salted water. They are cooked as a soon as they come up.
In a separate pan cut some onion and carrot with olive oil. Brown them, then add some water to let it cook. Blend the mix, to form a broth.
Serve the dumplings with the veg broth. Add some pepper and chives on the top.
