Step by Step method

Wash and cut in very thin horizontal slices the courgettes and the carrots, boiling them for about 20 min.

In a bowl mix the ricotta with the egg, a pinch of salt and some thyme. Add some extra virgin olive oil. Display the pastry in a baking tray, with greaseproof paper underneath. Then spread the ricotta mixture in.

Start displaying the vegetables in a circular way alternating them.

Once filled every space put in the oven at 180 degrees for about 40 minutes .
