A simple dish with asparagus;  the wild, spring , green so intense in flavour. Asparagus in a tomato sauce with tagliatelle, egg noodles. As simple as that.

Step by Step method

  • Trimm off the woody base steams from asparagus, wash them, and cut them in small pieces.

  • Cook them in a pan with some olive oil and a clove of garlic.

  • Let them cook till they lightly fry. Then add the chopped tomatoes, salt, pepper and leave for about 10 minutes at low heat.

  • ln the meantime boil some water in a pot to cook your tagliatelle. Once ready mix the egg noodles with the sauce and serve with a sprinkle of chili pepper powder.

Tips & variations

  • Use the woody steams in the boiling water you use for the pasta. It will give an extra flavour to the dish.
