Step by Step method

  • For the batter: mix in a bowl the flour, the cold sparkling water the oil and a pinch of salt. Mix with a whisk.

  • In a pan start to heat up the oil.

  • Wash gently the zucchini flowers, then start to stuff them with a ball of mozzarella cheese and an anchovy, put it in the batter that you have previously prepared, then put in the pan with the hot oil.

  • Fried for about 10 minutes and once ready settle in a plate with kitchen paper underneath.

  • Add a pinch of salt on the top. Ready to eat.
