Step by Step method

  • In a bowl, beat the eggs with salt and pepper

  • In a pan cook the chopped spinach with the onion.

  • Once the spinach is lightly fried remove from the pan and add to the egg mixture.

  • Spoon the mixture into a greased muffin pan.

  • Cook in the oven at 180°c for 30 mins.
