High in fibre and high quality protein, a full flavour quinoa salad…it will become your favourite!
Wash and cut finely all the veg.
Put them in a pan with some olive oil and cook. Add some salt and gradually the wine.
In a pan bring the water to a boil. Stir in the quinoa, then turn the heat down to low. Cover and simmer until all the liquid is absorbed, about 15 minutes.
Once cold, mix the quinoa with all the veg you prepared. Add the pesto and the green olives. The turmeric and the pepper.
Some fresh basil, a sprinkle of extra virgin olive oil. And serve.
Toast the quinoa if you want to maximise the flavour.
