Light and fluffy, easy homemade pumpkin pancakes super easy!

Step by Step method

  • In a bowl mix the flour, the yeast, salt and pepper.

  • In a different bowl, put the pumpkin previously cooked and smashed, with the eggs, mix it. Adding the grated parmesan.

  • Mix the the content of the two bowls together.

  • In a pan, heat the oil for frying. Then place a spoonful of the mix in the oil when hot. Cook about 2 minutes each side.

  • Drain the pancakes with paper towel and serve with some chives.

Tips & variations

  • Instead of the Parmesan you can use Cheddar.
