Crunchy aubergines cooked lightly in the oven.
Slice the aubergines very thinly. If you want them to taste less bitter peel off the skin.
Beat the eggs in a bowl and spread flour across a plate.
Dip each slice of aubergine in the egg first then in the flour. Place in an oven tray lined with greaseproof paper.
Drizzle with olive oil and bake in the oven for 25 mins at 200°c until they became a lovely golden colour and crusty on the outside.
