Crunchy aubergines cooked lightly in the oven.

Nutrients

2 aubergines
2 eggs
150 g flour
pinch of salt
extra virgin olive oil as required

Step by Step method

  • Slice the aubergines very thinly. If you want them to taste less bitter peel off the skin.

  • Beat the eggs in a bowl and spread flour across a plate.

  • Dip each slice of aubergine in the egg first then in the flour. Place in an oven tray lined with greaseproof paper.

  • Drizzle with olive oil and bake in the oven for 25 mins at 200°c until they became a lovely golden colour and crusty on the outside.
