Mozzarella “in a carriage”, countless variations on this Southern Italian recipe. Just delicious with any meal and at any time!
Display one slice of bread in a cutting board and put the mozzarella on the top finely sliced. Add a pinch of salt.
Cut the borders and make nice triangles.
On a plate put the flour, pour the eggs on a different shallow bowls. Dip the sandwiches in the flour then in the eggs. Finally into the breadcrumbs.
Leave them to rest for about ten minutes then fry them in oil for a few minutes.
They are delicious with anchovies and ham!
