Step by Step method

  • Wash and clean the vegetables. Then cut them finely.

  • Heat some extra virgin olive oil in a pan and add all the chopped ingredients, cook for about 30 minutes adding a liter of water. Add some salt.

  • With a blender reduce the mixture into a soft liquid. It is then ready to serve.

Tips & variations

  • Just add some pecorino cheese, if you like, or parmesan. Soup doesn't have to be boring, so add some chili pepper or toast some slices of bread to serve alongside!
