Classic puffy savoury piadina made using only chickpea flour – suitable for everybody.
Lovely gluten-free recipe.
Step by Step method

Mix the water in a bowl with the olive oil, then gradually add the chickpea flour trying not to form clumps.

Add the rosemary, salt and pepper.

Leave the liquid to rest for at least half an hour.

Mix it again and pour the liquid into a large oven tray lined with greased greaseproof paper.

Cook in the oven at 180-200°c for 40 minutes until you see a little golden crust forming on the top.
