Beat the eggs with the sugar then gradually add the olive oil or butter.
In a bowl put the flour and the baking powder,mix them and then add to the rest of the mixture.
Clean, wash and shred the carrots using either a grater or a food processor,very finely. Then add them to the mixture.
Place on a baking tray lined with greased greaseproof paper, and cook for about 40 minutes.
