Go Italian!

The secret of Italian cuisine is simplicity. Italian cuisine is one of the most well-known and offered in restaurants all over the world. Chefs rely on sources of good ingredients more than anything else.
Often, when abroad is not easy to source the right product or ingredient for a dish, but the absence of complexity in their preparation does help.
Frequently, especially in the Anglo-Saxon world, there is a belief that a dish is not accomplished if is not is enriched with copious sauces and many ingredients, while on the other hand Italian cuisine draws attention to the quality of the few ingredients used in a dish.
Whenever you go to a restaurant that offers Italian dishes elsewhere, hoping to find traditional food, it can be disappointing if the menu is a compromise between the “original” and the customs of the country you are in. There are plenty of weird and improbable re-interpretations of the Italian classics that can even be hard to look at!
Also, the distinction Italians make between courses doesn’t help much when dishes that contain everything are well established and deeply rooted in most other countries.
Besides the regional varieties sometimes emphasised even between cities, Italian cuisine comes from traditions and the most celebrated dishes have been created in the last century by a “nonna” rather than a chef!
Having been in London for a while I honestly have to say that the Italian food available on the market has improved enormously in the last few years and even if you will never feel at home, thanks to globalisation you really can get close to it if you think carefully about what you order and never have high expectations. Either way, Viva l’Italia!
