Mouthwatering and appetising lasagna with a bunch of ingredients: courgettes, sundries tomatoes and mascarpone cheese.

Step by Step method

  • Cook the lasagna stripes in boiling water for few minutes to soften them.

  • Meanwhile wash and grate the courgettes very finely.

  • Put them in a pan with extra virgin olive oil, and onion to cook for 5 minutes.

  • In a bowl put the mascarpone, and when the courgettes are ready mix them with it, adding a pinch of salt.

  • In a tray spread some olive oil then place the first layer of lasagne, adding the courgettes and mascarpone mix, some grated parmesan and the sundries tomatoes.

  • Place three layers as above, sprinkle with parmesan cheese. And cook in the over for 25 minutes at 200 degrees.

Tips & variations

  • Instead of the sundries tomatos you can use mortadella for a non vegetarian option!
