This cake is light and irresistible. A simple option that works well as a dessert or as and indulgent breakfast.
Separate the egg yolks form the whites. Beat the yolks with the sugar until very fluffy.
With a spatula mix in the ground nuts. Previously roasted.
Beat the egg whites to soft, with a pinch of salt.
Fold the egg whites into the egg mixture, very gently, mixing from bottom up.
Put the cake mixture into a tray and place in the oven at 180 degrees for about 30 minutes.
Do not overbake it should be moist inside. Check with a toothpick.
When ready dust with a cloud of icing sugar and decorate with chocolate topping.
