A simple dish with asparagus; the wild, spring , green so intense in flavour. Asparagus in a tomato sauce with tagliatelle, egg noodles. As simple as that.
Trimm off the woody base steams from asparagus, wash them, and cut them in small pieces.
ln the meantime boil some water in a pot to cook your tagliatelle. Once ready mix the egg noodles with the sauce and serve with a sprinkle of chili pepper powder.
Use the woody steams in the boiling water you use for the pasta. It will give an extra flavour to the dish.
