Step by Step method

  • Wash and cut finely all the veg.

  • Put them in a pan with some olive oil and cook. Add some salt and gradually the wine.

  • In a pan bring the water to a boil. Stir in the quinoa, then turn the heat down to low. Cover and simmer until all the liquid is absorbed, about 15 minutes.

  • Once cold, mix the quinoa with all the veg you prepared. Add the pesto and the green olives. The turmeric and the pepper.

  • Some fresh basil, a sprinkle of extra virgin olive oil. And serve.

Tips & variations

  • Toast the quinoa if you want to maximise the flavour.
