Lovely light cake that’s simple to make, canned pineapple will absolutely work.

Step by Step method

  • In a bowl mix the eggs with the sugar. Add the pineapple juice and the flour.

  • Put the baking powder and three slices of pineapple cut in little cubes.

  • Place the mix in a previously battered tray, and put some pineapple slices on the top.

  • Put in the oven for 40 minutes at 180 degrees.

Tips & variations

  • I always use an Italian baking powder brand with an hint of vanilla. Pane e Angeli.
