Mozzarella “in a carriage”, countless variations on this Southern Italian recipe. Just delicious with any meal and at any time!

Step by Step method

  • Display one slice of bread in a cutting board and put the mozzarella on the top finely sliced. Add a pinch of salt.

  • Close the sandwich with another slice of bread and press to secure.

  • Cut the borders and make nice triangles.

  • On a plate put the flour, pour the eggs on a different shallow bowls. Dip the sandwiches in the flour then in the eggs. Finally into the breadcrumbs.

  • Leave them to rest for 15 min in the fridge. Then dip again in the eggs and in the breadcrumbs, pressing to secure the sandwich.

  • Leave them to rest for about ten minutes then fry them in oil for a few minutes.

Tips & variations

  • They are delicious with anchovies and ham!
